Asian Cucumber Salad

½ cup matchstick carrots 1 cucumber, sliced 1 tablespoon rice vinegar 1 tablespoon soy sauce 1 tablespoon oil ½ teaspoon sesame oil 1 clove garlic, crushed ½ teaspoon salt ½ teaspoon sugar ¼ teaspoon chili sauce Gently whisk together sauce ingredients until emulsified. Toss with cucumbers and carrots, chill and serve.
