Outlook 2010 Quick Steps are a great way to automate multi-step email tasks. For example, you can use the Reply & Delete Quick Step to automatically delete a message after you reply to it. Outlook 2010 comes with a few default Quick Steps that you can customize to suit your needs. My personal favorite is the Categorize and Move Quick Step that lets me categorize a message and automatically move it to a designated sub-folder.
